Raymond Blanc’s restaurant and pub business has served up a 14 per cent rise in sales after a year of restaurant openings, including its first in a hotel.
The celebrity chef’s Brasserie Bar Co, which includes the Brasserie Blanc restaurants and White Brasserie pubs, opened four pubs and two restaurants, including one in Bournemouth’s Marriott Highcliff Hotel, after securing a £20 million funding deal to expand the business.
The 68-year-old Michelin-starred chef is hoping to open 24 sites over the next five years off the back of the financing from business bank Oaknorth.
Mark Derry, chief executive of Brasserie Bar Co, said: ‘In a difficult year for the licensed retail sector, we are delighted to report another period of considerable achievement.
‘We served some 1.6 million guests, collected 40,000 pieces of feedback with an average score of nine out of ten and saw eight sites breaking sales records.
‘We look forward to growing our estate and our team despite industry challenges.’
