At least in Hollywood, Asians are relegated to supporting roles (to white). Then there was the "whitewashing" with the latest being "Ghost in the Shell". The issue is not centered around Asian in Asian countries, since they are the dominant. The group that suffered the most is the Asians born in western world. They look Asian on the outside, but they are every bit westernized (or "white") on the inside. Hence the "banana" term. As the minority, they are not fully "normalized" in western world. When they go back to Asia, they are not "one of us" as said by Eleanor (the mother) in the film. She is referring to the "white inside", which is born to the American value (self happiness) which is incompatible with the Asian family value (self sacrifice for the greater good of the family).
While everyone can enjoy this movie as a romantic comedy, the writers/director wanted to focus on a thread in the book and that is the journey of an American of Asian woman to find her self-worth – that she can have the best of both worlds and not the doubt of not belong in neither. Given that there are 10s of millions of Asian-Americans and without proper Hollywood representation (therefore not enough jobs for aspiring actors), this film becomes a movement to convince Hollywood that it's not true a movie requires a white lead in order to make money. Similar can be said to be other decedents of Asians in other countries like the UK, Australia, Canada, etc. Note that Black Panthers was also a big movement earlier this year, although that was in the Marvel space so hard to tell it would make money regardless of the representation.
Back to the book/movie, anyone born in a country where s/he is a minority can relate. This is why the book was #1 seller in over 20 countries and highly recommended as a must-read from someone like Whoopi Goldberg. Also many identify the single mom angle in the movie. The gorgeous background, spectacular wedding, crazy richness, and happy ending are just your rom com backdrops. If the movie is filmed in Asia, where happy ending is considered cheesy, the movie could've ended after the epic mahjongg showdown and that would've been perfect as Rachel walks away finding herself. The girl does not need to get the guy says the director Jon M. Chu. It's not a cinderella story.

If I wanted to see genuine, authentic “asian” film-making I’ll watch ‘The Raid’, ‘Old Boy’, ‘Stray Dog’ etc.

Not sure why people are getting butt-hurt in the comments haha. For me as an Asian guy growing up in the UK it's nice to see for the first time in my life a movie with an Asian male actor who isn't depicted as an absolute geek/ unattractive loser/ enemy i.e. Hangover, Bruno, Breakfast at Tiffany's.
East Asians make up 6% of America so why is it such a bad thing Hollywood has made the first movie in around 20,000 (800 movies released a year in 25 years) which reflects this?
All you need to look at is how many Hollywood movies released telling an Asian related story with a white savior i.e. The great wall, Dragon Ball, Air bender, Ghost in the shell, Edge of Tomorrow, The martian, 21 etc etc
